Ingredients

  • 3 ripe bananas mashed
  • ½ cup melted butter
  • 1 tablespoon ground cinnamon
  • ¾ cup allulose
  • ¼ cup coconut sugar or brown sugar
  • 2 tablespoons vanilla extract or measure with your heart
  • 2 eggs at room temperature
  • ½ cup greek yogurt
  • 1 ¼ cup all purpose flour
  • 1 teaspoon baking powder
  • a pinch of salt
  • ½ cup chocolate chips optional
  • 1 cup chopped dark chocolate optional
  • 1 cup walnuts optional

Instructions

  1. Preheat your oven to 350°F and grease or line a loaf pan.
  2. In a large bowl mash the bananas until smooth.
  3. Add melted butter, cinnamon, allulose, and coconut sugar. Mix well.
  4. Stir in vanilla extract, eggs, and Greek yogurt until smooth and combined.
  5. Add flour, baking soda, and salt.
  6. Gently fold dry ingredients into the wet mixture. Do not overmix.
  7. Fold in chocolate chips and walnuts if using.
  8. Pour into your loaf pan and top with extra chocolate or nuts.
  9. Bake for 50 minutes, or until a toothpick comes out clean.
