Healthy Refined Sugar-Free Banana Bread
Ingredients
- 3 ripe bananas mashed
- ½ cup melted butter
- 1 tablespoon ground cinnamon
- ¾ cup allulose
- ¼ cup coconut sugar or brown sugar
- 2 tablespoons vanilla extract or measure with your heart
- 2 eggs at room temperature
- ½ cup greek yogurt
- 1 ¼ cup all purpose flour
- 1 teaspoon baking powder
- a pinch of salt
- ½ cup chocolate chips optional
- 1 cup chopped dark chocolate optional
- 1 cup walnuts optional
Instructions
- Preheat your oven to 350°F and grease or line a loaf pan.
- In a large bowl mash the bananas until smooth.
- Add melted butter, cinnamon, allulose, and coconut sugar. Mix well.
- Stir in vanilla extract, eggs, and Greek yogurt until smooth and combined.
- Add flour, baking soda, and salt.
- Gently fold dry ingredients into the wet mixture. Do not overmix.
- Fold in chocolate chips and walnuts if using.
- Pour into your loaf pan and top with extra chocolate or nuts.
- Bake for 50 minutes, or until a toothpick comes out clean.
- Let cool slightly before slicing and enjoying.
