Healthy Chocolate Covered Dates with Peanut Butter
Ingredients
- 12-16 Medjool dates pitted
- ½ cup all-natural organic peanut butter
- 1 cup dark chocolate chips or chopped dark chocolate
- 1 teaspoon coconut oil optional
- 2 tablespoons crushed pistachios optional
- 2 tablespoons chopped walnuts optional, for stuffing
Instructions
- If your dates aren’t already pitted, slice them lengthwise and remove the pit. Gently open them without splitting all the way through.
- Spoon about 1–2 teaspoons of peanut butter into each date. If using walnuts, press a few pieces into the peanut butter before closing slightly.
- In a microwave-safe bowl, melt the dark chocolate in 20–30 second intervals, stirring in between until smooth. Stir in coconut oil if using for extra shine.
- Dip each stuffed date halfway (or fully) into the melted chocolate. Place on a parchment-lined baking sheet.
- While the chocolate is still warm, sprinkle crushed pistachios on top.
- Place in the refrigerator for 15–20 minutes, or until the chocolate hardens. Enjoy immediately or store in an airtight container in the fridge for up to 1 week.
