Healthy Chocolate Covered Dates with Peanut Butter

If you need a healthy-ish dessert that satisfies your sweet tooth fast, this is it.

Ingredients

  • 12-16 Medjool dates pitted
  • ½ cup all-natural organic peanut butter
  • 1 cup dark chocolate chips or chopped dark chocolate
  • 1 teaspoon coconut oil optional
  • 2 tablespoons crushed pistachios optional
  • 2 tablespoons chopped walnuts optional, for stuffing

Instructions

  1. If your dates aren’t already pitted, slice them lengthwise and remove the pit. Gently open them without splitting all the way through.
  2. Spoon about 1–2 teaspoons of peanut butter into each date. If using walnuts, press a few pieces into the peanut butter before closing slightly.
  3. In a microwave-safe bowl, melt the dark chocolate in 20–30 second intervals, stirring in between until smooth. Stir in coconut oil if using for extra shine.
  4. Dip each stuffed date halfway (or fully) into the melted chocolate. Place on a parchment-lined baking sheet.
  5. While the chocolate is still warm, sprinkle crushed pistachios on top.
  6. Place in the refrigerator for 15–20 minutes, or until the chocolate hardens. Enjoy immediately or store in an airtight container in the fridge for up to 1 week.
