If you’re anything like me, sweet cravings tend to hit hard after lunch, usually when I don’t feel like baking or making a mess of the kitchen. That’s exactly why these no-bake peanut butter oatmeal bars are one of my all-time favorite snacks.

They’re chewy, naturally sweet, and endlessly customizable. You can dial the sugar up or down, swap in whatever nuts or dried fruit you have on hand, and truly make them your own. I keep a batch in the fridge at all times for when I want something sweet but still nourishing—and honestly, they never last long.
No oven. No fancy equipment. Just simple ingredients and a few minutes of mixing.

Easy No Bake Peanut Butter Bars
Ingredients
Dry ingredients
- 1½ cups rolled oats
- 1 cup nuts of choice roughly chopped
- ½ cup seeds of choice
- ½ cup dried fruit
- ¼ cup chocolate chips
- ½ teaspoon ground cinnamon
- ¼ teaspoon salt
Wet Ingredients
- ¾ cup natural peanut butter
- ½ cup honey
- 2 tablespoons coconut oil melted
Instructions
- Line an 8×8-inch pan with parchment paper, leaving some overhang so the bars are easy to remove later.
- In a large bowl, combine the oats, nuts, seeds, dried fruit, chocolate chips, cinnamon, and salt. Give everything a good stir.
- In a separate bowl, stir together the peanut butter, honey, and melted coconut oil until smooth and glossy.
- Pour the wet mixture into the dry ingredients and mix until everything is evenly coated and sticking together.
- Transfer the mixture into your prepared pan and press it down firmly into an even layer. The firmer you press, the better the bars will hold together.
- Refrigerate for 2–4 hours, or until firm.
- Once set, remove from the pan, slice into bars or squares, and enjoy whenever a sweet craving hits.
