Easy No Bake Peanut Butter Bars

These no-bake peanut butter oatmeal bars are my go-to when I’m craving something sweet but still want a wholesome snack. They’re chewy, satisfying, and totally customizable—you can easily adjust the sweetness, swap in your favorite mix-ins, and make them exactly how you like.

Ingredients

Dry ingredients

  • cups rolled oats
  • 1 cup nuts of choice roughly chopped
  • ½ cup seeds of choice
  • ½ cup dried fruit
  • ¼ cup chocolate chips
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt

Wet Ingredients

  • ¾ cup natural peanut butter
  • ½ cup honey
  • 2 tablespoons coconut oil melted

Instructions

  1. Line an 8×8-inch pan with parchment paper, leaving some overhang so the bars are easy to remove later.
  2. In a large bowl, combine the oats, nuts, seeds, dried fruit, chocolate chips, cinnamon, and salt. Give everything a good stir.
  3. In a separate bowl, stir together the peanut butter, honey, and melted coconut oil until smooth and glossy.
  4. Pour the wet mixture into the dry ingredients and mix until everything is evenly coated and sticking together.
  5. Transfer the mixture into your prepared pan and press it down firmly into an even layer. The firmer you press, the better the bars will hold together.
  6. Refrigerate for 2–4 hours, or until firm.
  7. Once set, remove from the pan, slice into bars or squares, and enjoy whenever a sweet craving hits.
