Thick, tangy, and packed with protein, this homemade tzatziki is perfect for grain bowls, wraps, grilled meats, roasted vegetables, or as a Mediterranean dip.
Servings: 4

Ingredients

  • 1 cup 0% fat Greek yogurt
  • ½ large cucumber, grated and drained
  • 1 tablespoon fresh lemon juice
  • ½ tablespoon olive oil
  • 1 garlic clove, finely minced or grated
  • 1 tablespoon fresh dill, finely chopped
  • 1 tablespoon fresh mint, finely chopped (optional)

Instructions

  1. Using the large holes of a box grater, grate the cucumber.
  2. Place grated cucumber in a clean kitchen towel or cheese cloth and squeeze out as much liquid as possible. This step ensures a thick and creamy tzatziki.
  3. In a medium bowl, combine Greek yogurt, lemon juice, garlic, dill, olive oil and mint.
  4. Stir the drained cucumber into the yogurt mixture until fully combined.
  5. Add salt to taste. Adjust lemon or garlic if needed.
  6. Refrigerate for at least 30 minutes to allow flavors to develop.

Notes

  • For extra thickness, use strained Greek yogurt.
  • Garlic flavor intensifies as it sits — start with one small clove.
  • If your tzatziki becomes watery after storing, simply stir before serving.
  • Full-fat Greek yogurt can be substituted for a richer version.
