Chipotle Honey Chicken (Chipotle Copy Cat)

Ingredients

  • 1 ½ pounds  boneless skinless chicken thighs (or breasts if preferred)
  • 3 tablespoons honey
  • 2-3 chipotle peppers in adobo sauce (plus 1 tbsp sauce)
  • 3 cloves garlic minced
  • 2 tablespoons olive oil
  • Juice of one lime
  • 1 tablespoon smoked paprika
  • 1 tablespoon cumin
  • 1 teaspoons salt
  • ½ teaspoon black pepper

Instructions

  1. Make the marinade: In a blender or food processor, combine honey, chipotle peppers, adobo sauce, garlic, olive oil, lime juice, paprika, cumin, salt, and black pepper. Blend until smooth.
  2. Marinate the chicken: Place chicken in a glass bowl or zip-top bag. Pour marinade over and coat well. Refrigerate for at least 1 hour (up to overnight for best flavor).
  3. Cook the chicken: Heat skillet over medium-high, add a little oil, and cook 7–10 minutes per side.
  4. Rest & serve: Let chicken rest for 5 minutes before slicing. Drizzle with any extra sauce from the pan and serve in bowls, tacos, or wraps.

Notes

Cooking times:
-Grill: Preheat to medium-high and cook 6–7 minutes per side until fully cooked.
-Oven: Bake at 400°F for 22–25 minutes, until internal temp reaches 165°F.
